Peruvian Food for Beginners: Dishes to Order and Ingredients to Check

For a first Peruvian restaurant visit, choose a main you want to eat, then check its sauce, sides and preparation. Lomo saltado offers a beef stir-fry; pollo a la brasa offers roast chicken; ajĂ­ de gallina offers chicken in a creamy pepper sauce. Ceviche and tiradito contain raw fish, so they need a different decision. You do not have to order raw seafood to explore Peruvian food.

Start with your table, not a must-eat list

Eating alone: ask whether the main includes rice, potatoes or salad before adding a side. Eating with someone: ask about serving sizes and start with a shared starter and one or two mains according to appetite. This is a sample ordering strategy, not a fixed portion or budget claim.

For a cooked meal, consider roast chicken with its included sides, or a cooked fish main if available. For a creamy dish, check the ingredients in ajĂ­ de gallina before ordering. For a vegetarian meal, ask about a vegetable causa or rice-and-bean dish, including stock and toppings; a potato or bean base does not settle what is in the finished plate.

Eight menu names and the question to ask

Lomo saltado

Beef, onion and tomato stir-fried with soy seasoning, usually served with potatoes and rice. A useful option when you want a hot main.

Ask: “What sauce do you use, and are rice and fries included?” Soy sauce may contain wheat; check both if relevant.

Pollo a la brasa

Roast chicken sold in portions or as a bird to share. Sides and dipping sauces vary.

Ask: “Which portion suits our table, and what is in the marinade and sauces?” Check the actual recipe for soy, wheat, egg or dairy rather than assuming plain chicken ingredients.

AjĂ­ de gallina

Shredded chicken in a creamy ajĂ­ pepper sauce. Bread, milk, cheese and nuts can be part of the sauce; egg may be a garnish.

Ask: “Does the sauce contain bread, dairy or nuts, and how much chili is already mixed in?” Removing the garnish does not remove ingredients blended into the sauce.

Causa

A chilled seasoned-potato dish with a filling such as chicken, tuna or avocado. It is a starter or light meal depending on its size.

Ask: “What is the filling, and does it contain mayonnaise, egg or seafood?” An avocado filling does not automatically make the whole dish vegan.

Arroz chaufa

Peruvian Chinese fried rice, often with egg and a meat or seafood choice.

Ask: “Can you make a vegetable version, and what is in the seasoning and cooking stock?” Check the pan and utensils too if an allergy is involved.

Arroz con mariscos

Rice with seafood, often including several kinds of shellfish. A cooked seafood option to discuss with the kitchen.

Ask: “Which seafood is included, and is it all fully cooked?” This is not an alternative for someone who needs to avoid shellfish unless the kitchen can provide a suitable different dish.

Ceviche and tiradito

Ceviche commonly combines raw fish with citrus and chili; tiradito presents thin slices of raw fish with a sauce. Citrus changes texture but is not heat cooking.

Ask: “Is this raw, and do you have a fully cooked alternative?” Read the raw-fish guidance below before choosing.

Anticuchos

Grilled skewers, traditionally beef heart. Other versions exist, so check the menu rather than assuming steak or chicken.

Ask: “Which meat is used, how is it cooked, and what comes with it?” Choose according to your preferences; trying offal is optional.

Check the whole order, including drinks

FDA egg guidance recommends pasteurized eggs or egg products in dishes served with raw or undercooked egg. Removing alcohol from a cocktail does not address its raw egg.

A sample cooked order for two

Ask about a vegetable-filled causa to share, then choose roast chicken or lomo saltado with the included sides. Confirm that the causa filling and sauces fit both diners. Add another main only after checking portion sizes and appetite. If raw seafood is unsuitable, ask for a fully cooked fish dish instead of substituting tiradito for ceviche.

Ceviche is still raw fish

Lime juice, a fresh smell, an opaque color or a “sushi-grade” label is not proof that fish is safe to eat raw. A short citrus marinade is not a substitute for cooking. FDA advises cooking seafood to reduce illness risk; freezing can control parasites but does not eliminate every harmful germ.

Pregnant people, children, older adults and people with weakened immune systems should avoid raw or undercooked seafood, including ceviche. These are the FoodSafety.gov minimum cooking temperatures. For other meats or recipe changes, consult the relevant row in its chart. Refrigerate perishable food within two hours, or one hour above 90°F / 32°C. Keep seafood cold at 40°F / 4°C or below; if you will not use fresh seafood within two days, freeze it. Do not use reheating to rescue food left warm too long.

Common first-visit questions

Do I need to start with ceviche?

No. Roast chicken, a cooked stir-fry or a suitable vegetable dish can be your first meal. Ceviche and tiradito are both raw-fish options; switching between them does not resolve a need to avoid raw seafood.

Is ajĂ­ de gallina mild?

It depends on the kitchen's pepper mixture and your tolerance. Ask before ordering. The creamy sauce is not evidence that it has no chili.

Does a food award tell me what to order?
